Winemaking Notes
The grapes are picked when they are fully ripe with some raisining. They are then destemmed and macerated at a cool temperature. When the fermentation just starts we press off the juice and fortify it with a very neutral grape spirit. It is then carefully aged and blended via a solero system.
Food Matches
It is wonderful with desserts made from caramel, toffee, chocolate and rich ice cream. Or just simply a coffee and petit fours.
