Winemaking

Made from Jones vines planted in 1905, the Ugni Blanc (Trebbiano) grapes were hand-picked on 12th February 2024.  After being whole bunch crushed the grapes were pressed and the juice placed directly in an old French oak barrel (500 litres). The fermentation was carried out by natural yeast and the wine was then aged for 7 months in the barrel with lees stirring to enhance texture and complexity.  A limited quantity wine.

Here, acidity is noted and so, too, an equally generous level of tart citrus. This wine really gets the gastric juices working overtime. It works well with a palate that offers a young, super fresh and dry appeal in grapefruit and quince and lemon zest with a splash of green apple bite. Bring on the shellfish and enjoy.
