Winemaking Notes
Made from a blend of Shiraz (52%) and Durif (48%) from various parcels of our 2023 vintage. The sparkle was put into this wine using the traditional bottle fermentation method. This wine has a minimum of 6 months yeast lees maturation and after disgorging was liquored to a sugar level of 14.0g/L.
