Winemaking Notes
Made from our estate grown fruit, after handpicking on 6th February 2024, the grapes were whole bunch pressed. The juice produced was then placed directly into stainless steel tanks and the fermentation was carried out by natural yeast. The wine was aged in tank for 7 months with lees stirring periodically to enhance texture and complexity.
Food Matching
This wine is excellent with shellfish, crudités, poultry or goat cheese and a crisp mixed salad.
Halliday Wine Companion: "The gingery spice is super nice on this young fiano, bringing a touch of the savoury to add to the wine's great drinkability. Fiano has a big future at Jones, combining not just varietally strong apple, pear and citrus notes but setting out some distinctive and attractive spices and
savoury-influenced preserved lemon and ginger characters with hints of green almond. It's a lovely combo outside the usual fiano, soft texturally across the mid-palate and topped off with some extra-lively acidity." 92 Points - Jeni Port, February 2025
