Winemaking Notes

Made from our estate grown fruit, after picking the grapes were crushed. The juice produced was then placed in stainless steel tank and fermented in contact with it's skins - a technique normally used in red wine making. After pressing the wine was aged in older French Oak barrels. The wine was aged for 7 months with lees stirring periodically to enhance texture and complexity. Alc 10.4%, cellaring up to 8 years.
