Winemaking Notes
Made from grapes grown in our 50-year-old vineyard. Mostly Shiraz, there is also some Muscat of Hamburg and a smattering of Chasselas, Sultana and Muscat Gordo Blanc. The grapes were harvested on 26th February 2022, destemmed and then fermented all together in open vats with hand-plunging. The fermentation time was short, and the temperature was cool. Malolactic fermentation and maturation in older French oak barrels. The wine was matured for 8 months in oak barrels and then fined with egg white prior to bottling.
Food Matching
Great with antipasto and pasta dishes as well as pizza, or just on its own. Chill it slightly and enjoy the moment.
