Winemaking Notes
Made from estate grown Durif vines that are 10 years old. The grapes were harvested on 2nd March 2021 fermented in open vats, hand-plunged, macerated on skins for 14 days then pressed. The wine was matured in 470-liter, new (50%) and one-year old French oak barrels for 18 months. Prior to bottling it was fined with egg white.
