Winemaking Notes
Made from grapes grown in our vineyard planted in 1905. The Shiraz and handful of Grenache (< 5%) grapes were harvested by hand on 21st February 2019, yielding less than 1 tonne per hectare. After de-stemming, it was fermented in open wooden vats, hand-plunged then pressed. Maturation in barrel then fined with egg white prior to bottling. The wine was matured for 18 months in oak barrels, 65% of which was new French oak. Alc. 14.1%, cellaring 5 to 15 years.

This wine marries perfectly with lamb, game and slow cooked beef dishes. A delight with hard cheeses.
