The bouquet is complex with notes of spice and red berry fruits and chocolate. The palate has great persistence of flavour; rich fruit of cherries and plums, spice and black pepper and is backed up by abundant yet fine tannins. The complex finish has bold intensity of chocolatey, berry flavours, with length and persistence.
Made from grapes grown in some of our older vineyards. The grapes were harvested by from 15th February to the 1st March 2018, destemmed and then fermented in open vats with hand-plunging. Malolactic fermentation and maturation in barrel then fined with egg white prior to bottling. The wine was matured for 18 months in oak barrels, 30% of which was new French oak.
Alc. 13.2%, cellaring well for up to 8 years.
Great with cheese, game and red meat-based dishes. Try with confit duck breast or a pink rack of lamb with a herb breadcrumb crust.
With a delicious Sunday lunch on a wet wintry day with good friends and no plans except for an afternoon nap.
