Winemaking
Made from Jones vines planted in 1905, the Ugni Blanc (Trebbiano) grapes were hand-picked on 7th March 2023. After being whole bunch crushed the grapes were pressed and the juice placed directly in an old French oak barrel (500 litres). The fermentation was carried out by natural yeast and the wine was then aged for 7 months in the barrel with lees stirring to enhance texture and complexity. A limited quantity wine with 601 bottles made.
