Winemaking Notes
Made from grapes grown in our vineyards. This wine was made from Shiraz (55%) and Durif (45%). The wine was made by running the juice away from the skins before too much colour was obtained from both the Shiraz and Durif. After racking the juice was fermented in older oak barrels at a low temperature. The wine was matured in the barrel with lees stirring for texture and complexity for 7 months. Alc 12.2%, drink now whilst it is young and fresh.
