Winemaking Notes
Made from grapes grown in our 18-year old vineyard. The grapes were fermented in open vats, hand-plunged then pressed. Malolactic fermentation and maturation in barrel then fined with egg white prior to bottling. The wine was matured for 12 months in oak barrels, 60% of which was new French oak.
Food Matching
Great with duck, cassoulet, game and braised red meat dishes. Try with beef ribs grilled on the BBQ.
