Tasting Notes

The bouquet is complex with notes of spice and red berry fruits and chocolate.  The palate has great persistence of flavour; rich fruit of cherries and plums, spice and black pepper and is backed up by abundant yet fine tannins.  The complex finish has bold intensity of chocolatey, berry flavours, with length and persistence.

 

Winemaking Notes

Made from grapes grown in some of our older vineyards.  The grapes were harvested from 20th February to the 26th February 2019, destemmed and then fermented in open vats with hand-plunging.  Maturation was in barrel then the wine was fined with egg white prior to bottling.  The wine was matured for 18 months in oak barrels, 30% of which was new French oak.

Alc. 14.2%, cellaring well for up to 8 years.
